Do you say that from experience? I agree some crystallized ginger can taste kind of odd, almost soapy, sometimes; it can also be rather fibrous. But I kind of got to like it.

i have never had candied ginger before, i was just thinking how weird it could possibly be, but you seem to like it so maybe ill give it a try

Well, Riz, if you do... I hope it's the good stuff!


My latest batch, I saved out some without coating it with sugar (I usually do that almost immediately). Most of it stayed quite sticky, kind of like the consistency of the candied apricots I used to get.

I also included a photograph of the orange fondant (I don't really know what to call it) that I made with the leftover syrup. I'm always looking for a way to use it, and this is my latest attempt. (It was good-- mainly because it was 99.9% sugar.)

As for the white part of the orange, I decided to taste it, and contrary to what so many recipes say, it was not bitter AT ALL. The bitterness was definitely in the actual orange peel. I still removed it, though.
