Sesame Rounds



1 cup all-purpose flour, plus more for dusting
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 teaspoon freshly grated lemon zest
Pinch of cayenne pepper
2 tablespoons chopped fresh thyme
3 tablespoons sesame seeds, unhulled
2 tablespoons unsalted butter, cut in pieces
1 large egg white
Coarse salt, for sprinkling

Directions

Preheat oven to 350 degrees F/175 C. In the bowl of a food processor, pulse flour, salt, black pepper, lemon zest, cayenne, thyme, and 2 tablespoons sesame seeds. Add butter; pulse until mixture resembles coarse meal. With machine running, add 1/4 cup cold water; process until dough comes together.

Transfer the dough to lightly floured surface, and divide it into 2 equal parts. Roll out to 1/8-inch thickness. Cut into 2 1/2-inch circles, and transfer to an ungreased baking sheet.

Brush egg white over rounds; sprinkle with remaining tablespoon sesame seeds and coarse salt. Bake 20 to 25 minutes, until firm to the touch. Let cool on wire rack. Store in an airtight plastic container, at room temperature, up to 1 week.

Cheddar Crackers



1 cup all-purpose flour(can use whole wheat for healthier alternative)
3/4 tsp. salt
1/2 tsp. ground pepper (optional)
4 TBSP cold unsalted butter, cut into small pieces
8 ounces grated cheddar cheese
3-4 TBSP water

Directions

Pulse the flour, salt and pepper, then add butter and pulse until the mixture resembles coarse meal. Add grated cheese a little at a time until the mixture again resembles coarse meal.

Pulse in 3 to 4 tablespoons of water, one tablespoon at a time, until the dough forms into a ball. It will probably take a minute or so.

Remove, wrap in plastic, and chill for 20 minutes or up to 24 hours. This way the butter has time to solidify and it makes for puffier crackers.

Roll the dough out to 1/8th-inch thickness directly onto a baking sheet. You don't want to roll them paper thin, neither do you want to roll them too thick. If they are too thin, they will not puff up as much. If they are too thick, they will not be as crispy.

Using a knife or pizza cutter, cut 1 inch squares.

Bake at 350 F/175C for 15-20 minutes or until crackers are golden brown. Watch them after the 10 minute mark.

Parmesan Sesame Crackers



Makes about 4 dozen

Ingredients

2 cups All-purpose flour
1 tsp Baking powder
1/2 tsp Salt
2/3 cup warm water
1/3 cup Vegetable oil
1 Egg white blended with 2 TBS water
6 TBS Sesame seeds3 TBS poppy seeds
1 /3 cup shredded Parmesan cheese

Directions

1. Preheat oven to 400 F. Lightly grease two 14x17-inch baking sheets. Combine flour, baking powder and salt, most of the seeds and cheese in large bowl. Sometimes I mix in all the parmesan and seeds into the dough. But you can reserve some as a topping.

2. Stir in water and oil, mixing until smooth dough forms. Halve dough.

3. Flatten 1 piece into large square directly on 1 prepared sheet. Cut into 2 3/4 x 3 1/4-inch pieces, leaving in place on baking sheet.

4. Pierce all over with fork. Brush generously with egg white mixture.

5. Sprinkle with extra cheese and seeds( if you didn't use it all in the dough). Repeat with remaining half of dough. Bake until crackers are dry and golden, 10 to 12 minutes. Recut if necessary. Cool on racks.

6. Store crackers in airtight container.

This is not a real cracker but can use as a snack or at a dinner.

Parmesan Pepper Crisps



Ingredients

2 cups parmesan cheese, loosely packed and coarsely grated
2 teaspoons of lemon pepper spice blend

Tips & Notes
Can be stored in the refrigerator in an airtight container for up to three days.

Instructions

1.Preheat oven to 450 degrees F/ (300) 320 C.
2.Place heaping teaspoonsful of cheese 2 inches apart on nonstick baking sheet. Flatten the cheese mounds with the back of a spoon. Top each mound with a pinch of lemon pepper.
3.Bake 1 to 2 minutes until just lightly browned. Watch carefully to avoid burning.
4.Cool 2 minutes, carefully remove to a rack, cover with paper towels.

Salted Poppy Seed Crackers



2 tablespoons poppy seeds
2 eggs
3 tablespoons butter
cup oil
1 tablespoon baking powder
A pinch salt
1 cup cornflour
2 cups + 2 tablespoons flour

Preheat the oven to 180 C (355 F).

Add butter, oil, eggs, poppy seeds and salt, then mix them together in the bowl.

Add cornflour, flour and baking powder on to the mix. Knead till you have a soft dough.

Divide the dough into four pieces and spread them with the rolling pin.

Cut out pieces using shape cutter and put them on the tray with greased paper on it.

Egg wash all the shaped dough pieces and bake in the oven until their edges are browned.

Homemade Fritos



INGREDIENTS
1/2 cup yellow cornmeal
1/2 teaspoon salt
3/4 cup boiling water
1 teaspoon olive oil

1. Preheat oven to 450F degrees.

2. Combine cornmeal and salt in a mixing bowl. Pour in boiling water and stir, add olive oil, and stir until well blended.

3. Drop mixture by heaping teaspoonfuls onto a well-greased baking sheet and press each one with the bottom of a glass. Bake for 12 to 15 minutes or until golden brown.

Makes approximately 3 dozen chips
